Here’s a great idea for lunch. An awesome crunchy salad.

Ingredients 

1 onion (cut into wedges)

2tbsp olive oil

50g frozen peas

1 tbsp apple cider vinegar

1tbsp dijon mustard

2 rashers bacon (chopped)

2 handfuls of mixed salad leaves (shredded)

Cooking Method

1.Heat the oven to 220c (200c fan). Lightly oil a baking sheet. Arrange onion wedges and drizzle with 2tbsp of oil. Roast for 15 minutes.

2.Cook peas in boiling water for 2 minutes. Rinse in cold water.

Recipe - Bacon Salad

3. Whisk together 2 tbsp of olive oil, mustard and vinegar to make the salad dressing.

4. Turn the onion wedges. Drizzle with the remaining oil, if required. Place the bacon pieces on the baking sheet alongside the onions. Cook for a further 12 minutes. 

5. In a bowl, toss peas and bacon with the dressing. Serve warm over the salad leaves and top with the onions. Allow to chill for lunch box.
