Recipe – Chicken Curry With Spinach
Warm Up With This Delicious Recipe....
Here’s another recipe from the Fitness Formation vault, and this is another great meal that you can make if you’re entertaining or cooking for the family. This dish serves four people, and here’s how it is done:
1lb skinless chicken breasts (sliced)
3 tsp coconut oil
1 onion (chopped)
2 cloves of garlic (crushed)
1 tsp fresh chopped ginger
1 green chilli (chopped finely)
1 celery stick (chopped)
400g chopped, tinned tomatoes
2 tbsp tomato puree
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground turmeric
1/4 tsp garam masala
150ml live yoghurt
200g baby spinach
1. Melt oil in a pan, add the onion, garlic, ginger, chilli and celery and cook on low heat for 5 minutes.
2. Stir in the tomatoes, puree, spices and water. Increase the heat to medium and bring to the boil, then reduce heat to simmer for 15 minutes.
3. Add the yoghurt to the sauce, stir then add the chicken and cook for 15 minutes.
4. Stir in the spinach and cook for just a further 2 minutes before serving.
