Here’s another great recipe from our ‘Fitness Formation Cook Book’.

A nice simple pasta dish. 

Ingredients

1 tbsp olive oil

2 chicken breasts (sliced)

250g penne pasta

1 red pepper (finely diced)

1 tbsp fresh parsley

100g Philadelphia light

5 tbsp semi-skimmed milk

1 tbsp sliced black olives

1 tbsp dried Italian mixed herbs

Cooking Method

1.In a large non-stick frying pan add half the olive oil and cook the chicken until golden brown, this takes 5 to 7 mins.

2.In a large saucepan, cook the pasta according to packet instructions, for 2 to 3 mins. Drain.

3. Add remaining oil and red pepper to the frying pan. Cook for 1 to 2 mins.

4. Next add the cream cheese and milk. Stir until combined. Toss the chicken, sauce and dried herbs through the pasta. Sprinkle with sliced olives and fresh parsley.

Serve immediately.
