Recipe – Sunday Brunch
Another Gem From The FF Cook Book....
Here’s an idea for a weekend friendly brunch. Little preparation, and little cooking time needed for this one.
Perfect for a Sunday morning.
Ingredients
2 wholemeal muffins
8 rashers of bacon (halved)
4 whole eggs
2 tomatoes (sliced)
2 large mushrooms (sliced)
4 tbsp of vegetable stock
Cooking Method
1. Heat grill. Toast muffins for 1 to 2 minutes on cut side. Set aside in warm oven.
2. Cook bacon under the grill for approx 2 to 3 minutes on each side. Set aside in oven.
3. In a baking dish or foil, grill the tomatoes for 2 to 3 minutes. Set aside in warm oven.
4. Place mushrooms in stock in a pan and simmer for 4 to 5 minutes. Drain. Set aside.
5.Poach the eggs for 2 to 3 minutes.
6. Assemble, and enjoy.
