Recipe – Baked Mexican Eggs
A Great Winter Warmer....
This is a great dish for cooler days and longer nights. Here’s what you’ll need:
Ingredients
55g minced beef
1/2 tbsp olive oil
1/2 garlic clove (crushed)
1/4 onion (chopped)
100g tinned chopped tomatoes
1/2 small chilli (de-seeded, diced)
1/2 courgette (grated)
2tbsp tomato puree
1/4 tbsp chilli powder
1/4 tbsp smoked paprika
1 whole egg
Method
1. Pre-heat to 180c (160c fan)
2. In a large saucepan, heat oil and add the onion and garlic. Fry for 5 minutes over a medium heat until soft. Add the beef and cook until it starts to turn brown.
3. Stir in tomatoes, pepper, courgettes, puree and spices. Cook for twenty minutes and then spoon into a ramekin.
4. Break an egg into the ramekin and bake in the oven for 5-10 minutes and serve immediately.
