Recipe – Chorizo Eggs
Time For Breakfast....
Here’s a great idea for a lazy weekend breakfast for the family. Here’s what you’ll need to enjoy this tasty continental style brekkie for four:
Ingredients
150g chorizo sausage (diced)
8 eggs
2 garlic cloves (minced)
2 red chillies (finely chopped)
1 avocado (mashed)
1 tbsp coconut oil
1 tbsp smoked paprika
1 bunch coriander (chopped)
Method
1. In a non-stick frying pan, over a medium heat, melt the coconut oil and add the onions. Fry until soft. Add the chorizo and fry until it has browned and the onion has caramelised.
2. In a large bowl, whisk the eggs. Mix in the chillies, garlic, coriander and smoked paprika. Add the eggs to the pan, along with the mashed avocado. Cook and mix until it resembles scrambled eggs.
3. Serve, and enjoy.
