A great dish for sharing with friends this weekend. Here are all the details you’ll need:


6 chicken drumsticks (skin removed)

6 chicken thighs (skin removed)


1 lime (zest and juice)

2 lemongrass stalks (chopped)

5cm fresh ginger (peeled and chopped)

3 garlic cloves

2 tbsp peanut butter

160ml coconut cream

1tbsp turmeric

1tbsp cumin

Recipe - Chicken Satay


1. Slash cuts into chicken thighs and drumsticks and place aside in a large bowl

2. In a blender, blend all marinade ingredients until smooth

3. Pour the marinade over the chicken and rub in. Place in the fridge for at least two hours

4. Heat the oven to 190c (170c fan)

5. Line some baking sheets with foil and roast chicken for one hour. Allow to cool before serving.

Good for use in packed lunches or for picnics, too.
