Here’s another recipe from our own Fitness Formation Cook Book. This is a great healthy idea for breakfast or lunch.

Ingredients

2 whole eggs

3 egg whites

1 tomato (sliced)

Small handful basil (chopped)

100g sweet potato (peeled & grated)

20g onion (finely diced)

1 tbsp coconut oil

1 to 2 pinches of salt

Cooking Method

Slice the tomatoes and sprinkle with salt to draw out the juice. Set aside.

Melt the coconut oil over a low heat in small non-stick frying pan. Add the grated sweet potato and chopped onion. Cook gently, and stir when needed for 5 to 8 minutes.

Recipe - Frittata

Meanwhile, whisk the whole eggs and egg whites together in a bowl.

Add the tomato slices and basil to the frying pan. Pour in the eggs. Cover. Allow the frittata to cook over a low heat for 10 to 15 minutes.

Serve immediately or allow to cool, and serve with a green salad.
